Eats - Shirred Eggs (and banana strawberry waffles)

Eggs fresh from the oven
Shirred Eggs is a baked egg dish and can be made either in individual portions in a muffin tin or in a baking dish as more of a casserole.


Ingredients:
Salsa or ketchup or tomatoes
Eggs (Careful not to break the yolk)
Cheese, grated or crumbled
Paprika
Salt
Pepper

Directions:
Preheat oven to 375 deg.
Grease a baking dish or muffin tin.
Fill the bottom of the dish or each cup of the tin with a layer of salsa, ketchup, or tomatoes.
Break one egg into each cup of the muffin tin or break as many as you desire into the baking dish - but don't overfill the dish or the eggs will never get done.
Cover the top with cheese, add salt and pepper to taste, and top off with a dash of paprika.
Bake for 15-25 minutes, or until you slightly shake the pan and the eggs no longer jiggle.

(I can't take credit for the waffles - the boyfriend is the waffle genius - but they were delicious with chopped up strawberries and banana added to the batter.  Mmmm.  Be sure to add a bit more of your dry ingredients if you try this.)
