In a previous post, I mentioned turning the leftover pierogie stuffing into potato pancakes. I’ve never made potato pancakes, but I had some idea how it should be done. Anyway, I did it, and they were good! Really good! I just threw an egg and some flour and some more ricotta in before I cooked them. Sadly, I didn’t bother with pictures - they weren’t as pretty as they were tasty. That’s all, just had to brag.
